The Kansas Beef Council (KBC) recently partnered with Kansas City chef and restaurateur Chad Tillman to create a recipe and cooking video that shows how to serve up a delicious and easy Philly cheesesteak using an economical flat iron steak. Tillman is a master butcher with more than 20 years of experience.
“One of my favorite cuts of beef is the flat iron steak,” he said. “It’s fast, tender and delicious. It just needs a little salt, pepper and some time to really create an amazing meal.”
The recipe was custom-designed for KBC’s Recipes from the Heartland series that showcases easy-to-make comfort food creations from local culinary experts. Tillman tops a hoagie roll with tender strips of flat iron steak, sautéd vegetables, cheese and a simple homemade au jus to create a dine-out experience consumers can enjoy in the comfort of their home. Tillman joins other notable Kansas City chefs who have collaborated on the series, including Alex Pope of the Local Pig, Anakaren Ibarra and Kara Anderson. Their recipes have been seen almost one million times in the last two years. Ashley Barre and Jayuan Smith (Chef J) also have developed recipes for the series. Those will be released later this year.
